BMAT 2013 Section 2 Question 5

The action of which enzyme(s) could decrease the pH of a mixture of carbohydrate, protein and lipid?

Answer:

A logical way of solving this question is to identify the products which will be formed when these three enzymes are added to the mixture.

Carbohydrase enzyme will break carbohydrates into sugars which are non-acidic.

Protease will break protein into amino acids. Amino acids are slightly acidic which means they would lower the pH

Lipase will break fats into fatty acids and glycerol.

So the action of enzymes protease and lipase will lower the pH of the mixture
